A quick and easy weeknight chili that delivers deep, smoky flavor in under 30 minutes. Using rotisserie chicken and chipotle peppers in adobo, this dish is a comforting, crowd-pleasing meal perfect for cold nights.

  • 2 cups cooked chicken, shredded or diced
  • 2–3 chipotle peppers in adobo sauce, minced
  • 2 tablespoons adobo sauce
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen or canned corn kernels
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) red beans, rinsed and drained
  • 2 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 tablespoon tomato paste
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and pepper to taste
  • 1 lime, juiced
  • Fresh cilantro, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent (3-4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  2. Add cumin, smoked paprika, and chili powder to the pot. Stir constantly for about 60 seconds to bloom the spices.
  3. Stir in the minced chipotle peppers and adobo sauce, mixing well with the onion and spice mixture.
  4. Pour in chicken broth, diced tomatoes (with juices), and tomato paste. Stir until tomato paste is dissolved and bring to a gentle simmer.
  5. Add rinsed black beans, red beans, and corn. Simmer for 5 minutes to allow flavors to meld.
  6. Gently fold shredded chicken into the pot. Heat through for 2-3 minutes, ensuring chicken does not overcook.
  7. Taste and adjust seasoning with salt and pepper. Squeeze lime juice into the pot and stir. Add more adobo sauce for extra heat if desired.
  8. Ladle into bowls and top with fresh cilantro, shredded cheese, avocado slices, or sour cream. Serve immediately.

Notes

For a milder version, reduce chipotle peppers to one. If the chili is too thin, mash some beans against the side of the pot to thicken. Letting the chili rest for 10 minutes after cooking allows flavors to settle. It tastes even better the next day.
