A hearty, comforting beef stew made with chuck roast, red wine, and root vegetables in a slow cooker. This easy ‘set it and forget it’ recipe delivers rich, savory flavors and tender meat with minimal effort.

  • 2–3 lbs beef chuck roast, cut into 1.5-inch cubes
  • 1 tablespoon flour (for searing)
  • Salt and pepper to taste
  • 2 tablespoons butter
  • 2 large yellow onions, chopped
  • 4–5 large carrots, chopped into thick rounds or batons
  • 4 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 bottle (750ml) dry red wine (Pinot Noir, Merlot, or Cabernet Sauvignon)
  • 2 cups low-sodium beef broth
  • 1 can (15 oz) tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary
  • 2 bay leaves
  • 1.5 lbs Yukon Gold potatoes, peeled and cut into 1-inch chunks

Instructions

  1. Pat the beef chuck roast dry and cut into 1.5-inch cubes. Toss the cubes in a bowl with 1 tablespoon of flour, salt, and pepper.
  2. Heat butter in a large skillet or Dutch oven over medium-high heat. Sear the beef in batches (do not crowd the pan) for 3-4 minutes per side until deeply browned. Remove beef and set aside.
  3. In the same skillet, sautรฉ onions and carrots for 3-4 minutes until softened. Add garlic and tomato paste, stirring constantly for 1 minute. Scrape up browned bits from the bottom of the pan.
  4. Transfer the seared beef and its juices to a 6-quart slow cooker. Add the sautรฉed onion and carrot mixture.
  5. Pour in the red wine, beef broth, tomato sauce, Worcestershire sauce, thyme, rosemary, and bay leaves. Stir gently to combine.
  6. Add the chopped potatoes to the slow cooker, ensuring they are mostly submerged in liquid.
  7. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until beef is fork-tender.
  8. Remove bay leaves. Taste and adjust seasoning with salt and pepper. If the sauce is too thin, remove the lid and cook on HIGH for 30 minutes to reduce.
  9. Serve hot, optionally topped with fresh parsley or sour cream.

Notes

Do not skip searing the meat for better flavor. Use dry red wine only; avoid sweet or cooking wines. Potatoes may become grainy if frozen, but flavor remains good. For a thicker stew, use a cornstarch slurry or reduce liquid at the end.
