Ingredients

Scale
  • 2 medium apples (mix of tart and sweet, e.g., Granny Smith and Honeycrisp), cored and sliced into half-inch chunks
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon granulated sugar
  • 2 tablespoons packed brown sugar (for caramel)
  • 1 tablespoon heavy cream
  • 1 tablespoon unsalted butter (for caramel)
  • 1/4 teaspoon flaky sea salt (for caramel)
  • 1/4 cup old-fashioned rolled oats
  • 2 tablespoons all-purpose flour
  • 1 tablespoon brown sugar (for topping)
  • 1 tablespoon cold unsalted butter, cubed (for topping)
  • A pinch of nutmeg (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a small bowl, toss apple slices with lemon juice, granulated sugar, and cinnamon. Let sit for 5 minutes.
  3. In a microwave-safe bowl, combine 2 tablespoons brown sugar, heavy cream, and 1 tablespoon butter. Microwave for 30-45 seconds, stirring every 15 seconds, until smooth and glossy. Pour into the bottom of two 6-ounce ramekins and swirl to coat.
  4. Spoon the seasoned apples on top of the caramel layer in the ramekins.
  5. In a mixing bowl, combine oats, flour, 1 tablespoon brown sugar, nutmeg, and cold cubed butter. Rub with fingers or a fork until the mixture resembles wet sand.
  6. Sprinkle the oat topping evenly over the apples.
  7. Place ramekins on a baking sheet and bake for 20-25 minutes, until topping is golden brown and caramel is bubbling.
  8. Let cool for 5 minutes. Sprinkle with flaky sea salt before serving.

Notes

For gluten-free, use certified gluten-free oats and flour. For dairy-free, substitute butter and cream with coconut oil and coconut cream. Avoid Red Delicious apples as they turn mushy. Ensure butter for the topping is cold for best texture.
