Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 10 to 12 inch cast iron skillet with butter or oil.
  2. Peel, pit, and slice the peaches into 1/4-inch thick slices. Place them in a mixing bowl.
  3. Add 1/4 cup granulated sugar and 2 tablespoons brown sugar to the peaches. Toss gently to coat and let sit for 10 minutes to macerate.
  4. In another bowl, whisk together flour, baking powder, salt, and cinnamon if using. Stir in 1/2 cup granulated sugar and 2 tablespoons brown sugar.
  5. Pour melted butter, milk, and vanilla extract into the dry ingredients. Stir until just combined; batter should be thick but pourable.
  6. Pour the peach mixture with juices into the greased skillet, spreading evenly. Spoon the batter over the peaches in dollops, leaving some peaches visible.
  7. Bake for 35-40 minutes until the topping is golden brown and the edges bubble. If topping browns too quickly, tent with foil halfway through baking.
  8. Let the cobbler rest for 10-15 minutes to thicken before serving.
  9. Serve warm with a generous scoop of vanilla ice cream.
