  • 2 medium honeynut squash, halved and seeded
  • 4 tablespoons unsalted butter
  • 10–12 large fresh sage leaves
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken stock (low-sodium)
  • 1 tablespoon olive oil (for roasting)
  • 1 tablespoon olive oil (for sautรฉing)
  • Sea salt and black pepper, to taste
  • 2 tablespoons heavy cream (optional)
  • 1 teaspoon maple syrup (optional)

Instructions

  1. Preheat oven to 400ยฐF (200ยฐC). Line a baking sheet with parchment paper.
  2. Cut squash in half lengthwise, scoop out seeds, brush cut sides with olive oil, and season with salt. Place cut-side down on the baking sheet.
  3. Roast squash for 35-45 minutes until flesh is tender and edges are caramelized.
  4. While squash roasts, melt butter in a small saucepan over medium heat. Stir constantly until it turns golden amber and smells nutty (3-5 minutes).
  5. Remove brown butter from heat and immediately stir in sage leaves until they crisp.
  6. In a large stockpot, heat 1 tablespoon olive oil over medium heat. Sautรฉ diced onion with a pinch of salt for 5-7 minutes until soft.
  7. Add minced garlic and cook for 1 minute until fragrant.
  8. Scoop roasted squash flesh into the pot, scraping in any caramelized bits from the pan.
  9. Pour in stock, bring to a boil, then reduce heat and simmer for 10 minutes.
  10. Remove from heat and puree soup with an immersion blender until smooth.
  11. Season with salt and pepper. Stir in heavy cream if desired.
  12. Ladle soup into bowls and drizzle with the brown butter and crispy sage mixture. Serve immediately.

Notes

If you cannot find honeynut squash, butternut squash is a suitable substitute, though the flavor will be less complex. Ensure the squash is cut-side down while roasting to steam the flesh in its own juices. For the brown butter, watch closely as it burns easily; remove from heat just before it reaches the desired color as residual heat will continue cooking it. The soup can be made ahead, but add fresh brown butter and sage just before serving.
