  • 1 cup brewed coffee (hot)
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 tsp ground ginger
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp black pepper
  • 2 tbsp molasses
  • 1 cup cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups white chocolate chips
  • 1 tbsp coconut oil or shortening
  • Sprinkles or crushed gingerbread men (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. Whisk together cake mix, spices, ginger, cinnamon, nutmeg, and black pepper in a large bowl.
  3. Add eggs, oil, coffee, and molasses; beat on medium speed for 2 minutes until smooth.
  4. Pour batter into the pan and bake for 20-25 minutes until a toothpick comes out clean.
  5. Let the cake cool completely in the pan.
  6. Crumble the cooled cake into fine crumbs in a large bowl.
  7. Add softened cream cheese, powdered sugar, and vanilla; mix until a thick, dough-like consistency forms.
  8. Chill the mixture in the fridge for 30 minutes.
  9. Roll the mixture into uniform balls (about 1 tablespoon each) and place on a parchment-lined sheet.
  10. Melt a small amount of white chocolate; dip the tip of lollipop sticks into the chocolate and insert halfway into each ball.
  11. Return pops to the fridge for 15 minutes to set the sticks.
  12. Melt remaining white chocolate chips with coconut oil until smooth.
  13. Dip each pop into the chocolate, twist to coat evenly, and tap off excess.
  14. Add sprinkles immediately if desired, then let set at room temperature or in the fridge for 20 minutes.

Notes

Ensure the cake is completely cool before crumbling to prevent the frosting from melting. Chill the cake balls thoroughly before dipping to ensure the chocolate sets properly and doesn’t crack. Do not let any water touch the melting chocolate to avoid seizing.
