Cozy Crockpot Lasagna Soup with Ricotta

A comforting slow-cooker soup that captures the flavors of lasagna in a spoonable format. Featuring tender noodles, savory beef, and creamy ricotta dollops, this dish offers rich, soul-soothing satisfaction with minimal effort.

  • 1 pound ground beef (80/20 lean-to-fat ratio preferred)
  • 1 medium yellow onion, finely diced
  • 3–4 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 2 cups beef broth (low sodium)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 8–10 lasagna noodles, broken into halves or quarters (no-boil recommended)
  • 1 cup shredded mozzarella cheese
  • 1 cup ricotta cheese
  • Fresh basil, chopped, for garnish

Instructions

  1. Heat a large skillet over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook until no pink remains (5-7 minutes). Drain excess grease if using fatty beef.
  2. In the same skillet, add a little oil if needed. Sautรฉ diced onion for 3-4 minutes until soft. Add minced garlic and cook for 30 seconds until fragrant.
  3. Transfer the beef and onion mixture into a 6-quart slow cooker. Add crushed tomatoes, tomato paste, beef broth, dried basil, oregano, Italian seasoning, and red pepper flakes. Stir well to combine.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours to allow flavors to meld. Do not add noodles yet.
  5. About 30 minutes before serving, break lasagna noodles into pieces. Add them directly to the slow cooker (if using no-boil noodles).
  6. Cover and cook on high for the final 30 minutes, or until noodles are tender. Stir occasionally to prevent sticking.
  7. While noodles cook, mix ricotta cheese with a little hot soup broth to loosen it. Stir in half of the mozzarella cheese into the soup.
  8. Ladle hot soup into bowls. Top each serving with a dollop of the ricotta mixture and remaining mozzarella. Garnish with fresh basil and serve immediately.

Notes

Do not add noodles at the beginning of cooking as they will turn to mush. Brown the meat properly to develop flavor via the Maillard reaction. Taste before adding salt as canned tomatoes vary in sodium. If the soup is too thick, add extra broth. Leftovers thicken in the fridge; add liquid when reheating.
