Cozy Crockpot Chicken and Dumplings from Scratch

A comforting slow-cooker meal featuring tender shredded chicken in a rich, creamy broth with fluffy, homemade biscuit-like dumplings. Perfect for cold nights and busy weeknights.

Ingredients

  • 2 pounds boneless, skinless chicken breasts or thighs
  • 1 medium yellow onion, finely diced
  • 2 large carrots, peeled and diced
  • 2 stalks celery, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 4 tablespoons unsalted butter, melted
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and black pepper to taste

Instructions

  1. Dice the onion, carrots, and celery, and mince the garlic.
  2. Add the diced vegetables and minced garlic to the bottom of a 6-quart slow cooker.
  3. Place the chicken on top of the vegetables.
  4. Pour the chicken broth over the chicken and vegetables. Sprinkle with dried thyme, parsley, and black pepper. Do not add salt yet.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours until chicken is tender.
  6. Remove chicken from the pot and shred into bite-sized pieces using two forks. Set aside.
  7. Stir heavy cream into the hot broth in the slow cooker. Taste and add salt if needed. Return shredded chicken to the pot.
  8. Turn slow cooker to HIGH to bring temperature up.
  9. In a medium bowl, whisk together flour and baking powder. Pour in melted butter and stir with a fork until mixture resembles coarse crumbs and clumps together.
  10. Roll dough into 12-15 golf ball-sized dumplings.
  11. Gently drop dumplings into the hot creamy broth. Cover and cook on HIGH for 30-45 minutes without lifting the lid.
  12. Check that dumplings are cooked through and fluffy. Serve immediately.

Notes

Do not overmix the dumpling dough to avoid tough dumplings. Keep the slow cooker covered during the dumpling cooking phase to retain steam. If the broth is too thin, thicken with a cornstarch slurry. Store dumplings separately from the broth to prevent sogginess.
