A quick and comforting chicken soup featuring pillowy, steamed dumplings made with simple pantry ingredients. This recipe uses rotisserie chicken for speed and delivers a rich, creamy broth in under 30 minutes.

  • 3 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 2 medium carrots, peeled and diced into small rounds
  • 2 stalks celery, diced

  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken stock
  • 1/2 cup whole milk or half-and-half
  • 1 teaspoon baking powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Heat butter in a large pot over medium heat. Add onion, carrots, and celery; sauté for 5 minutes until softened and onions are translucent.
  2. Add minced garlic and cook for 30 seconds until fragrant. Sprinkle in flour and stir constantly for 1 minute to create a roux.
  3. Pour in chicken broth, stirring to scrape up bits from the bottom. Bring to a gentle simmer and cook for 5 minutes.
  4. Stir in shredded chicken, dried thyme, and dried parsley. Taste and adjust salt and pepper. Let heat through for 2 minutes.
  5. In a medium bowl, whisk together flour, baking powder, salt, and pepper. In a separate small bowl, whisk milk. Pour wet ingredients into dry ingredients and stir gently until just combined (do not overmix).
  6. Drop dollops of batter into the simmering soup. Cover with a tight-fitting lid and steam for 10-12 minutes without peeking.
  7. Check that dumplings are cooked through and fluffy. Give soup a gentle stir, adjust seasoning if needed, and serve garnished with fresh parsley.

Notes

Do not overmix the dumpling batter to avoid tough dumplings. Ensure the soup is at a gentle simmer, not a rolling boil, when adding dumplings to prevent them from breaking apart. If your lid doesn’t seal tightly, tent foil over the pot before placing the lid on to trap steam. Dumplings do not freeze well; freeze the broth and chicken separately for up to 3 months.
