  • 3/4 cup packed brown sugar

  • 1 cup pumpkin puree

  • 1/2 cup packed brown sugar (for topping)
  • 2 tbsp all-purpose flour (for topping)
  • 1 tsp ground cinnamon (for topping)
  • 2 tbsp melted butter (for topping)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Line a 12-cup muffin tin with paper liners or grease thoroughly.
  2. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg. Set aside.
  3. Melt the 1/2 cup unsalted butter and let it cool slightly.
  4. In a medium bowl, whisk melted butter, granulated sugar, and brown sugar until combined. Add eggs one at a time, whisking well. Stir in pumpkin puree and vanilla extract.
  5. Pour wet ingredients into dry ingredients. Gently fold with a silicone spatula until just combined. Do not overmix.
  6. In a small bowl, mix 1/2 cup brown sugar, 2 tbsp flour, and 1 tsp cinnamon. Stir in 2 tbsp melted butter until crumbly.
  7. Divide batter evenly among muffin cups, filling each about 2/3 full.
  8. Sprinkle the brown sugar cinnamon topping generously over each muffin and press slightly.
  9. Bake for 20-25 minutes, rotating pan halfway through, until a toothpick inserted comes out clean.
  10. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely or serve warm.

Notes

Do not overmix the batter to ensure tender muffins. Use pure pumpkin puree, not pumpkin pie filling. Ingredients should be at room temperature for best results. Muffins can be stored at room temperature for 3 days or frozen for up to 3 months.
