A creamy, tangy, and slightly sweet macaroni salad with crunchy celery and sweet pickles, perfect for summer gatherings and backyard barbecues.

  • 2 cups (about 200g) uncooked elbow macaroni
  • 1 cup (240ml) mayonnaise (Duke’s or Best Foods recommended)
  • 1 cup finely chopped sweet pickles (about 150g)
  • 1 cup finely diced celery (about 100g)
  • 1/4 cup finely chopped yellow onion
  • 2 large hard-boiled eggs, chopped (optional)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon granulated sugar
  • 1 teaspoon Dijon mustard
  • Salt to taste (about 1/2 teaspoon)
  • Freshly ground black pepper to taste (about 1/4 teaspoon)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Bring a large pot of salted water (about 4 quarts) to a boil. Add 2 cups elbow macaroni and cook until just al dente, about 7-8 minutes. Drain in a colander and rinse under cold water to stop cooking and cool the pasta quickly. Shake off excess water and transfer to a large mixing bowl.
  2. While the pasta cooks, finely chop celery, sweet pickles, yellow onion, and hard-boiled eggs (if using).
  3. In a small bowl, whisk together mayonnaise, apple cider vinegar, granulated sugar, Dijon mustard, salt, and pepper. Taste and adjust seasoning.
  4. Add the chopped veggies and eggs to the cooled macaroni. Pour the dressing over and gently fold with a spatula until everything is evenly coated.
  5. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving to let flavors meld and salad chill.
  6. Just before serving, sprinkle with chopped fresh parsley for color and freshness.

Notes

Do not overcook the pasta; rinse immediately after draining to prevent mushiness. Use quality mayonnaise for best flavor and creaminess. Chill the salad for at least an hour or overnight for best taste. If salad seems dry after chilling, stir in extra mayo or a splash of milk. Add a squeeze of fresh lemon juice before serving for extra brightness.
