A simple and enchanting peach compote simmered with fresh ginger and honey, perfect for dim sum desserts or a light, flavorful treat.

  • 4 large fresh peaches, peeled, pitted, and sliced (about 600g / 1.3 lbs)
  • 2-inch piece fresh ginger, peeled and thinly sliced
  • 1/3 cup honey (113g)
  • 1/2 cup water (120ml)
  • 1 tablespoon freshly squeezed lemon juice (15ml)
  • 1 small cinnamon stick (optional)
  • 1 whole star anise (optional)
  • Pinch of salt

Instructions

  1. Peel, pit, and slice 4 large peaches into roughly 1/2-inch (1.3 cm) slices. Set aside.
  2. Peel a 2-inch piece of fresh ginger and slice it thinly (about 1/8-inch or 3 mm thick).
  3. In a medium saucepan, combine sliced peaches, ginger slices, honey, water, lemon juice, cinnamon stick, star anise (if using), and a pinch of salt.
  4. Place the pan over medium heat and bring the mixture to a gentle simmer, stirring occasionally. Reduce heat to low to maintain a soft simmer.
  5. Cook for 15 to 20 minutes, stirring every few minutes, until peaches are tender but not mushy and the liquid thickens to a glossy syrup.
  6. Taste and adjust sweetness by adding more honey or lemon juice if desired.
  7. Remove the cinnamon stick and star anise, discarding them. Optionally strain out ginger slices for a smoother compote or leave them in for texture.
  8. Let the compote cool for 10 minutes before serving or refrigerate to enjoy chilled. Stir in a teaspoon of water if syrup is too thick.

Notes

Use ripe but firm peaches for best texture. Slow simmering develops flavor and silky syrup. Adjust honey and lemon juice to balance sweetness. Store leftovers in an airtight container in the fridge up to 5 days. Reheat gently and stir in water if syrup thickens. Frozen peaches can be used after thawing and draining excess liquid.
