  • ¼ teaspoon black pepper

Instructions

  1. Grate or chop the zucchini and place in a colander. Sprinkle with 1 teaspoon salt and let sit for 10 minutes to draw out moisture. Press or squeeze with a clean towel to remove excess liquid.
  2. Preheat oven to 350°F (175°C).
  3. In a medium bowl, combine drained zucchini, cheddar and mozzarella cheeses, sour cream, mayonnaise, chopped onion, minced garlic, and beaten egg. Stir gently until evenly mixed. Season with ½ teaspoon salt and ¼ teaspoon pepper.
  4. In a small bowl, mix crushed Ritz crackers with melted butter until crumbs are evenly coated.
  5. Transfer zucchini mixture to a greased 9×9-inch baking dish, spreading evenly. Sprinkle the buttery Ritz crumb mixture evenly over the top.
  6. Bake for 35-40 minutes until edges bubble and topping is golden brown.
  7. Let casserole rest for 10 minutes before serving.
