Cozy Roasted Butternut Squash Soup with Toasted Pepitas

A creamy, comforting butternut squash soup made by roasting the squash to caramelize natural sugars, then blending it with aromatic spices and coconut milk for a rich, dairy-free finish.

  • 1 large butternut squash (about 3–4 lbs), peeled, seeded, and cut into 1-inch cubes
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, peeled and grated
  • 4 cups vegetable broth (low-sodium)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 can (13.5 oz) full-fat coconut milk
  • 1/2 cup raw pepitas (pumpkin seeds)
  • Pinch of red pepper flakes
  • Fresh cilantro or parsley for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Toss squash cubes with olive oil, salt, and pepper on a lined baking sheet. Roast for 35-40 minutes until caramelized and tender.
  2. While squash roasts, heat a splash of olive oil in a large pot over medium heat. Sauté onion until translucent (5 minutes). Add garlic, ginger, cumin, coriander, and smoked paprika; cook for 1 minute until fragrant.
  3. Add roasted squash and pan juices to the pot. Pour in vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes.
  4. Remove from heat and blend soup until smooth using an immersion blender or standard blender.
  5. Stir in coconut milk. Taste and adjust seasoning with salt and pepper. Add more broth if too thick.
  6. In a small dry skillet over medium-low heat, toast pepitas for 3-5 minutes until golden and fragrant. Watch closely to prevent burning.
  7. Ladle soup into bowls and top with toasted pepitas, a drizzle of coconut milk, red pepper flakes, and fresh herbs.

Notes

Roasting the squash is essential for deep flavor; boiling makes it watery. Toast pepitas separately to maintain crunch. If using a standard blender, vent the lid to avoid steam explosions. Soup thickens upon storage; thin with broth when reheating.
