A rustic, easy-to-make Southern dessert that combines the gooey, nutty flavor of pecan pie with a fluffy, golden-brown cobbler topping. No pie crust required, making it perfect for busy weeknights or potlucks.

Ingredients

Scale
  • 1 cup light corn syrup
  • 1 cup packed dark brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon coarse salt
  • 2 tablespoons pure maple syrup
  • 2 cups pecan halves
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup granulated sugar
  • 1/4 cup cold unsalted butter, cubed
  • 1/3 cup whole milk
  • 1/2 teaspoon cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). If using a glass dish, place it in the oven while it preheats to help the bottom crust set.
  2. In a medium bowl, whisk together melted butter, brown sugar, corn syrup, maple syrup, eggs, vanilla extract, and salt until smooth and glossy.
  3. Stir in pecan halves until evenly coated. Pour the mixture into the baking dish and spread evenly.
  4. In a small bowl, whisk together flour, granulated sugar, baking powder, and cinnamon.
  5. Add cold cubed butter to the dry ingredients. Use a pastry blender or fingers to work the butter into the flour until it resembles coarse sand with pea-sized chunks.
  6. Gradually stir in milk until the dough just comes together. It will be sticky.
  7. Drop large clumps of dough over the pecan filling, leaving gaps for the filling to bubble up.
  8. Bake in the center of the oven for 45-55 minutes, until the topping is golden brown and puffed, and the filling is bubbly around the edges. Cover loosely with foil if the top browns too quickly after 30 minutes.
  9. Cool on a wire rack for at least 30-45 minutes before serving to allow the filling to set.

Notes

Ensure butter is cold for the topping and melted for the filling. The cobbler must cool for at least 30 minutes to set properly, otherwise it will be runny. For best texture, use high-quality pecans. You can make the filling the night before and refrigerate it, adding the topping and baking the next morning.
