Instructions

  1. In a medium mixing bowl, whisk together the honey, Dijon mustard, whole grain mustard, olive oil, minced garlic, apple cider vinegar, soy sauce, salt, black pepper, and smoked paprika until smooth. Set aside about 1/4 cup of the marinade in a separate small bowl for basting and dipping.
  2. Cut the chicken breasts into 1-inch cubes. Place the chicken cubes in a large bowl or resealable plastic bag. Pour the remaining marinade over the chicken and toss to coat evenly. Cover and refrigerate for at least 30 minutes, ideally 2 to 4 hours.
  3. If using wooden skewers, soak them in water for at least 30 minutes.
  4. Remove the chicken from the refrigerator. Thread the marinated chicken cubes onto the skewers, leaving a small gap between each piece. Leave about an inch of space at the bottom as a handle.
  5. Preheat the grill to medium-high heat (375°F to 400°F). Clean the grill grates and oil them lightly.
