  • 1 teaspoon vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Peel, core, and slice apples into even 1/4-inch thick pieces. You should have about 6 cups of sliced apples.
  3. In a large bowl, toss the apple slices with granulated sugar, brown sugar, flour, cinnamon, nutmeg, lemon juice, and vanilla extract. Let sit for 5 minutes.
  4. Spread the apple mixture evenly in the prepared baking dish.
  5. In a medium bowl, whisk together oats, flour, brown sugar, salt, and cinnamon. Add cold butter cubes and cut in with a pastry cutter or fingers until the mixture resembles coarse sand with some pea-sized butter chunks.
  6. Sprinkle the oat crumble evenly over the apples. Gently press down in some spots, leave loose in others.
  7. Place the dish on a baking sheet and bake for 35-40 minutes, or until the filling is bubbly and the topping is golden brown. If browning too fast, tent with foil for the last 10 minutes.
  8. Let the crisp rest for at least 10 minutes before serving.
