A curated game day charcuterie board built for easy, one-handed eating. Featuring clusters of meats, cheeses, dips, crunchy snacks, and fresh produce, this spread is designed to feed a crowd without utensils and keep everyone happy from kickoff to the final whistle.

  • 8 oz prosciutto, thinly sliced, torn into ribbons
  • 8 oz Genoa salami, folded or rolled
  • 8 oz pepperoni slices
  • 8 oz sharp cheddar cheese, cut into 1-inch cubes
  • 8 oz smoked gouda, sliced thin
  • 4 oz brie cheese, whole or halved
  • 4 oz fresh mozzarella pearls, tossed with olive oil and herbs
  • 1 cup buffalo chicken dip, homemade or store-bought, served warm
  • 1/2 cup honey
  • 1/2 cup whole grain mustard
  • 1/2 cup ranch dressing
  • 1 box of your favorite crackers (buttery rounds and seeded crisps)
  • 1 bag thick-cut kettle chips
  • 1 cup pretzel sticks
  • 1 cup mixed nuts, roasted and salted (cashews and almonds)
  • 1 cup seedless red grapes, washed, in small clusters
  • 1 cup cherry tomatoes, halved if large
  • 1/2 cup cornichons or dill pickle spears
  • 1/2 cup marinated artichoke hearts, drained and halved
  • 1/2 cup roasted red peppers, sliced into strips
  • Bacon-wrapped smokies (optional, see recipe link)
  • Buffalo chicken dip bites (optional, see recipe link)

Instructions

  1. Prep your warm elements first. If making buffalo chicken dip, get it in the slow cooker or oven now. Also, if adding bacon-wrapped smokies, get those in the oven.
  2. Wash and dry all produce. Rinse grapes, cherry tomatoes, and any fresh herbs. Pat them completely dry with a paper towel.
  3. Prep the meats. For prosciutto, gently tear each slice into 2 to 3 pieces and loosely pile them. For salami, fold each slice in half, then in half again. For pepperoni, leave them in a stack or fan them out.
  4. Cut the cheeses. Cube sharp cheddar into 1-inch pieces. Slice smoked gouda into thin triangles. Leave brie whole or cut in half. Toss mozzarella pearls in a small bowl with olive oil, salt, and fresh basil if available.
  5. Arrange the bowls first. Place small bowls for dips, honey, and mustard on the board, spread out as anchors.
  6. Add the cheeses. Place cheese in different zones around the board, not all in one spot.
  7. Add the meats. Place piles of prosciutto, salami, and pepperoni near the cheeses, pairing complementary flavors.
  8. Fill in with crackers and chips. Arrange crackers and kettle chips in clusters around the board, not spread evenly.
  9. Add the fresh and pickled items. Tuck grapes, cherry tomatoes, cornichons, artichoke hearts, and roasted red peppers into gaps to fill empty spaces.
  10. Finish with the warm items. Once buffalo chicken dip and bacon-wrapped smokies are ready, place them in designated spots. If using a slow cooker for dip, keep it plugged in on the side.
  11. Add final touches. Sprinkle mixed nuts and pretzel sticks into remaining gaps. Drizzle honey over brie or gouda. Adjust anything that feels crowded or empty.

Notes

Take cheeses out of fridge 30 minutes before assembling for best flavor. Keep hot dips in separate bowls on the edge of the board to avoid steaming crackers. Use parchment paper for easy cleanup. Always keep a backup stash of crackers and cheese for halftime refresh.
