A quick and easy side dish featuring tender steamed carrots coated in a rich, glossy glaze made with brown sugar, butter, and bourbon. This recipe balances sweet and savory flavors for a festive, crowd-pleasing result.

Ingredients

Scale
  • 1.5 to 2 pounds large carrots
  • 1/4 to 1/2 cup water
  • 1 pinch salt
  • 4 tablespoons unsalted butter
  • 1/2 cup packed brown sugar
  • 1/4 to 1/3 cup bourbon
  • 1 teaspoon apple cider vinegar
  • Freshly cracked black pepper
  • Optional: 1/2 cup chopped pecans or walnuts

Instructions

  1. Wash, peel (optional), and cut carrots into 2-inch batons or 1/4-inch diagonal slices, keeping them uniform in size.
  2. Place carrots and salt in a large skillet with a lid. Add 1/4 cup water, cover, and steam over medium-high heat for 8-10 minutes until tender but not mushy. Drain excess water carefully.
  3. Reduce heat to medium. Add butter to the pan and let it melt and foam. Add brown sugar and stir constantly for 1 minute until dissolved.
  4. Carefully pour in bourbon, apple cider vinegar, and black pepper. Simmer for 2-3 minutes until the glaze thickens and becomes glossy.
  5. Return steamed carrots to the pan and toss to coat evenly. Turn off heat.
  6. Taste and adjust seasoning if needed. Serve immediately, topped with toasted nuts if desired.

Notes

Ensure all water is drained after steaming to prevent the glaze from seizing. Use medium heat to avoid burning the brown sugar. The apple cider vinegar is crucial for balancing the sweetness. Most alcohol cooks off, but a small amount remains.
