  • 1 can (12 oz) evaporated milk
  • 3 large eggs, room temperature
  • 1 cup granulated sugar
  • 1 box (15.25 oz) yellow cake mix
  • 1 cup unsalted butter, melted
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F. Grease a 9×13 baking dish with butter or non-stick spray.
  2. In a large bowl, whisk together the canned pumpkin, evaporated milk, eggs, sugar, pumpkin pie spice, vanilla extract, and salt until smooth and well combined.
  3. Pour the pumpkin filling into the prepared baking dish and spread it evenly.
  4. Sprinkle the dry cake mix evenly over the pumpkin filling. Do not stir.
  5. Drizzle the melted butter evenly over the cake mix. If using nuts, sprinkle them on top.

Notes

Don’t stir the cake mix into the pumpkin. The layers should stay separate. For extra crunch, use cold butter sliced into thin pats instead of melted butter. Let the cake rest for at least 15 minutes before serving to allow the filling to set. This dessert can be made ahead and actually tastes better the next day.
