  • 1 pound ground beef (80/20)
  • 1/2 pound ground pork
  • 1 cup plain breadcrumbs
  • 1/2 cup milk (whole or 2%)
  • 1 large egg, lightly beaten
  • 1/2 cup finely diced yellow onion
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons Worcestershire sauce
  • 1/2 cup ketchup
  • 1/3 cup packed light brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Line a large rimmed baking sheet with parchment paper or aluminum foil.
  2. In a large mixing bowl, combine 1 cup breadcrumbs with 1/2 cup milk. Let sit for 5 minutes until the breadcrumbs absorb the milk and form a paste.
  3. Add the lightly beaten egg, diced onion, minced garlic, salt, pepper, dried thyme, and 2 tablespoons Worcestershire sauce to the soaked breadcrumbs. Mix with a fork until well combined.
  4. Add the ground beef and ground pork to the bowl. Using your hands, gently mix everything together until just combined. Do not overmix.
  5. Transfer the meat mixture to the prepared baking sheet. Shape it into a loaf about 8 inches long, 5 inches wide, and 2 inches high. Do not pack too tightly.
  6. In a small bowl, whisk together the ketchup, brown sugar, apple cider vinegar, 1 teaspoon Worcestershire sauce, and garlic powder until smooth.
  7. Using a pastry brush or the back of a spoon, spread about half of the glaze evenly over the top and sides of the meatloaf. Reserve the rest.
  8. Bake for 40 minutes.
  9. After 40 minutes, carefully remove the pan from the oven. Brush or spoon the remaining glaze over the top of the meatloaf. Return to the oven and bake for another 20-25 minutes, until the internal temperature reaches 160ยฐF (71ยฐC).
  10. Let the meatloaf rest on the baking sheet for 10-15 minutes before slicing.

Notes

For a gluten-free version, use gluten-free breadcrumbs or crushed gluten-free crackers. For a turkey version, use 1.5 pounds ground turkey (93/7) and add 2 tablespoons olive oil. Let the meatloaf rest before slicing to keep it juicy.
