  • 2 medium delicata squash (about 1.5 pounds total)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon cinnamon (optional but recommended)
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Preheat your oven to 425ยฐF (218ยฐC). Line a baking sheet with parchment paper or a silicone mat.
  2. Wash the delicata squash thoroughly and dry it. Cut off the stem end and bottom tip. Slice the squash in half lengthwise and scoop out the seeds and stringy pulp.
  3. Place each squash half cut-side down and slice crosswise into 1/2-inch thick half-moons. Try to keep them uniform in thickness.
  4. In a medium mixing bowl, whisk together the maple syrup, olive oil, salt, black pepper, and cinnamon if using.
  5. Add the sliced squash to the bowl and toss until every piece is evenly coated.
  6. Spread the squash pieces in a single layer on the prepared baking sheet. Do not overcrowd the pan.
  7. Roast for 15 minutes without disturbing.
  8. Remove the baking sheet from the oven. Flip each piece of squash. If there is any leftover glaze in the bowl, drizzle it over the squash now.
  9. Return to the oven and roast for another 10 to 15 minutes, until the edges are crispy and caramelized and the flesh is tender when pierced with a fork.
  10. Remove from the oven and let the squash rest on the baking sheet for 2 to 3 minutes. Transfer to a serving platter and garnish with fresh herbs or flaky sea salt if desired.

Notes

For extra crispy edges, broil the squash for the last 1 to 2 minutes of cooking, watching closely so the sugar does not burn. Pat the squash dry after washing to prevent steaming. Cut uniform pieces for even cooking. This recipe is naturally vegan and gluten-free.
