Ingredients

  • 1 pound smoked sausage (like kielbasa or andouille), sliced into rounds or half-moons
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 4 cups (about 1.5 lbs) Yukon Gold potatoes, peeled and diced into ½-inch cubes
  • 1 teaspoon dried thyme
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt (or to taste)
  • 3 cups chopped kale (stems removed)
  • ½ cup heavy cream or half-and-half

Instructions

  1. Heat the olive oil in a large pot over medium-high heat. Add the sliced sausage in a single layer (work in batches if needed). Cook undisturbed for 2-3 minutes until deeply browned, then stir and cook another 2-3 minutes. Transfer sausage to a plate with a slotted spoon; do not clean the pot.
  2. Reduce heat to medium. Add the diced onion to the pot and cook for 4-5 minutes, stirring occasionally, until soft and translucent. Scrape up any browned bits from the bottom. Add the minced garlic and cook for 30 seconds until fragrant.
  3. Pour in the chicken broth, deglazing the pot. Add the diced potatoes, dried thyme, smoked paprika, black pepper, and salt. Stir, bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
  4. Using a potato masher, gently mash about one-third to one-half of the potatoes in the pot to thicken the broth.
  5. Return the browned sausage to the pot. Add the chopped kale and stir. Cook for 3-5 minutes until the kale has wilted.
  6. Reduce heat to low. Stir in the heavy cream or half-and-half. Warm through for 1-2 minutes. Taste and adjust seasoning as needed. If the soup is too thick, thin with a splash of chicken broth or water.
  7. Serve immediately.

Notes

For best texture, use Yukon Gold potatoes. Don’t rush the browning of the sausage—it builds flavor. Season in layers. Avoid boiling after adding cream to prevent curdling. This soup thickens as it sits; thin with broth when reheating.
