Instructions

  1. Preheat oven to 350ยฐF (175ยฐC) and center the rack.
  2. Prepare the crust: If using store-bought, place in dish and prick bottom/sides with a fork. If making from scratch, press dough into dish and chill for 15 minutes.
  3. In a large bowl, whisk together heavy cream, maple syrup, bourbon, and vanilla extract until smooth and frothy.
  4. Add pumpkin puree, pumpkin pie spice, and salt to the wet mixture. Mix on low speed until just combined.
  5. Add eggs and egg yolk one at a time, mixing on low speed after each addition until smooth. Strain through a fine-mesh sieve if lumps remain.
  6. Pour filling into the prepared pie crust and smooth the top.
  7. Bake for 50-60 minutes. The edges should be set, but the center must still jiggle slightly like Jell-O when shaken.
  8. If edges brown too quickly, cover with a pie shield or foil after 20 minutes.
  9. Remove from oven and cool completely on a wire rack for at least 2 hours, preferably overnight, before slicing.

Notes

The pie is best made 1-2 days in advance to allow flavors to meld. Do not overbake; the center should jiggle slightly when removed from the oven as it will firm up while cooling. For a dairy-free option, substitute heavy cream with full-fat coconut cream. For a gluten-free option, use a gluten-free pie crust.
