This cinnamon sugar apple fritter bread captures the soul of a county fair fritter, baked into a tender, buttery loaf with a crackly cinnamon-sugar crust and tender apple-studded crumb. No deep-fry thermometer required—just a bowl, a pan, and about ten minutes of your time.

Ingredients

Scale
  • 2 medium apples, peeled, cored, and diced (Honeycrisp or Granny Smith recommended)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream or plain Greek yogurt (full-fat recommended)
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup milk (whole milk ideal, 2% or oat milk works)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line it with parchment paper, leaving overhang on the long sides for easy removal.
  2. In a small bowl, toss the diced apples with 2 tablespoons sugar, 1 teaspoon cinnamon, and 1 tablespoon flour. Set aside.
  3. In another small bowl, whisk together 1/2 cup sugar, 2 teaspoons cinnamon, and the nutmeg if using. Set aside.
  4. In a large bowl, beat the softened butter with 1/2 cup granulated sugar and 1/2 cup brown sugar until light and fluffy, about 2-3 minutes with an electric mixer. Scrape down the sides.
  5. Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream (or Greek yogurt).
  6. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Do not overmix.
  7. Gently stir in the milk until the batter is smooth and thick.
  8. Pour half of the batter into the prepared loaf pan and spread evenly. Sprinkle half of the cinnamon sugar mixture over the batter, then arrange half of the diced apples on top. Pour the remaining batter over the apples and spread gently. Top with the remaining apples and sprinkle the rest of the cinnamon sugar mixture over everything. Gently swirl the layers together with a knife or fingers.
  9. Bake on the middle rack for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly, tent loosely with aluminum foil around the 40-minute mark.
  10. Let the bread cool in the pan for 15 minutes, then use the parchment sling to lift it out and transfer to a wire rack to cool completely. Wait at least 30 minutes before slicing.

Notes

For the best texture, use room temperature butter and eggs. Avoid overmixing the batter. For an extra crackly crust, brush the baked bread with melted butter and sprinkle with additional cinnamon sugar while still warm. The bread tastes even better on day two. Store tightly wrapped at room temperature for up to 3 days, or freeze for up to 3 months.
