  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs, room temperature

  • 1 tablespoon apple cider vinegar
  • 1/2 cup granulated sugar (for coating)
  • 1 tablespoon ground cinnamon (for coating)

Instructions

  1. Pour 2 cups of apple cider into a medium saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until reduced by half (about 1 cup). This takes 10-15 minutes. Let cool completely.
  2. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger.
  4. In a separate large bowl, beat softened butter and 3/4 cup granulated sugar with an electric mixer on medium speed for 3-4 minutes until light and fluffy.
  5. Add eggs one at a time, beating well after each addition. Mix in vanilla extract and apple cider vinegar.
  6. Reduce mixer speed to low. Alternately add dry ingredients and cooled reduced cider to the butter mixture, starting and ending with dry ingredients. Mix just until combined. Fold in diced dried apples if using.
  7. Divide batter evenly among muffin liners, filling each about 3/4 full.
  8. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  9. Cool in pan for 5 minutes, then transfer to a wire rack to cool completely.
  10. Mix 1/2 cup sugar and 1 tablespoon cinnamon. Roll cooled muffins in the mixture to coat.

Notes

Ensure the reduced apple cider is completely cool before adding to the batter to prevent melting the butter. Do not overmix the batter to maintain a chewy texture. For gluten-free options, use a 1:1 gluten-free baking blend. For vegan options, substitute butter with vegan butter and eggs with flax eggs.
