This creamy, spicy buffalo chicken dip is the ultimate game day appetizer. Ready in under 30 minutes with simple ingredients, it’s a crowd-pleaser that disappears fast.

Ingredients

Scale
  • 16 ounces cream cheese, softened (two 8-ounce blocks)
  • 3 cups cooked chicken, shredded (about 1 pound)
  • ¾ cup Frank’s RedHot Original Cayenne Pepper Sauce
  • ½ cup ranch dressing
  • 2 cups sharp cheddar cheese, shredded (8 ounces)
  • ½ cup mozzarella cheese, shredded
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ cup green onions, sliced (for garnish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Soften the cream cheese: Let it sit on the counter for 30-45 minutes, or microwave on low power (30%) in 15-second bursts until soft.
  3. Shred the chicken: Use two forks to shred rotisserie or cooked chicken into bite-sized pieces.
  4. Mix the cream cheese base: In a large bowl, beat the softened cream cheese with a hand mixer on medium speed until smooth and fluffy (about 2 minutes).
  5. Add the hot sauce and ranch: Pour in the Frank’s RedHot and ranch dressing. Mix on low speed until fully combined.
  6. Fold in the seasonings and chicken: Add garlic powder, onion powder, salt, and pepper. Stir in the shredded chicken until coated.
  7. Add the cheese: Reserve ½ cup of cheddar for the top. Fold the remaining cheddar and all of the mozzarella into the chicken mixture.
  8. Transfer to the baking dish: Scrape the mixture into a greased 9×13-inch dish and spread evenly. Sprinkle reserved cheddar on top.
  9. Bake for 20-25 minutes until bubbling around the edges and lightly golden on top.
  10. Let it rest for 5 minutes before serving.
  11. Garnish with sliced green onions and serve with sturdy tortilla chips.

Notes

Let the chicken soak in the sauce for 5-10 minutes before baking for more flavor. Shred your own cheese for the smoothest melt. Watch the baking time to prevent separation.
