Instructions

  1. Prepare the peaches by scoring a shallow β€œX” at the bottom of each peach, blanching them in boiling water for 30 seconds, then plunging into ice water to peel easily. Chop into 1/2-inch pieces to yield about 3 cups.
  2. In a heavy-bottomed saucepan, combine chopped peaches, sugar, lemon juice, water, and cinnamon if using. Stir gently and let sit for 10 minutes to soften peaches and dissolve sugar.
