  • 1 (14-ounce) package little smoked sausages (like Lit’l Smokies)
  • 1 pound thin-cut bacon
  • 1/2 cup packed light brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • Pinch of cayenne pepper (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a rimmed baking sheet with aluminum foil and place a wire cooling rack on top if using.
  2. Cut the bacon slices in half crosswise to create short strips.
  3. Wrap each little smoked sausage with a piece of bacon, overlapping the ends slightly. Secure with a toothpick (soaked in water for 10 minutes to prevent burning). Place seam-side down on the wire rack or baking sheet.
  4. In a small bowl, whisk together the brown sugar, melted butter, smoked paprika, garlic powder, and cayenne pepper (if using) to form a thick paste.
  5. Brush the brown sugar glaze generously over each bacon-wrapped smokie, letting it drip down the sides.
  6. Bake for 25-30 minutes, brushing with any remaining glaze halfway through (at the 15-minute mark), until the bacon is crispy and the glaze is bubbly and caramelized.
  7. Let the smokies cool on the rack for about 5 minutes to allow the glaze to set slightly.
  8. Transfer to a serving platter. Remove toothpicks or leave them in for easy grabbing. Serve warm.
