15-Minute Garlic Butter Chicken Thighs: Easy One Pan Dinner

Crispy, juicy chicken thighs cooked in a rich garlic butter sauce, all in one pan and ready in just 15 minutes. Perfect for busy weeknights when you need a delicious dinner fast.

  • 46 bone-in, skin-on chicken thighs (about 1.5 lbs or 680g)
  • 3 tablespoons unsalted butter (42g), divided
  • 6 cloves garlic, minced (about 2 tablespoons)
  • 1 tablespoon olive oil (15ml)
  • 1 teaspoon kosher salt (5g), or to taste
  • ½ teaspoon freshly ground black pepper (2g)
  • 1 teaspoon paprika (2g)
  • ½ teaspoon dried thyme (1g), or 1 teaspoon fresh thyme leaves
  • ¼ cup low-sodium chicken broth (60ml)
  • 2 tablespoons fresh parsley, chopped (for garnish, optional)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt, pepper, and paprika. Let them sit at room temperature for 5 minutes while you prep the garlic.
  2. Mince your garlic and chop your parsley. Measure out your butter and broth.
  3. Heat your skillet over medium-high heat for about 2 minutes. Add the olive oil and 1 tablespoon of the butter. Swirl to coat the pan.
  4. Place the chicken thighs skin-side down in the hot skillet. Cook undisturbed for 5-6 minutes until the skin is golden brown and releases easily from the pan.
  5. Flip the chicken thighs using tongs. Cook for another 4-5 minutes on the second side until the internal temperature reaches 165°F (74°C).
  6. Remove the chicken to a plate and tent loosely with foil.
  7. Reduce heat to medium-low and add the remaining 2 tablespoons of butter to the pan. Once melted, add the minced garlic and stir constantly for about 30 seconds until fragrant.
  8. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan. Let it simmer for 1-2 minutes until slightly thickened. Stir in the dried thyme.
  9. Return the chicken to the pan, spooning some of the garlic butter sauce over the top. Let it warm through for about 1 minute. Sprinkle with fresh parsley if using.
  10. Serve immediately with the extra sauce spooned over the top.

Notes

Don’t overcrowd the pan—cook in batches if needed. Let chicken come to room temperature before cooking for even results. Watch the heat carefully to avoid burning the garlic. Double the sauce ingredients if you want extra. Leftovers keep in the refrigerator for up to 3 days. Reheat in a skillet with a splash of broth for best results.
