  • 1/3 cup honey (raw or wildflower preferred)
  • 1 cup packed brown sugar (dark or light)
  • 1/2 cup pineapple juice (fresh or canned)
  • 2 tablespoons Dijon mustard
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves (optional)
  • 2025 whole cloves (for studding the ham)
  • Freshly ground black pepper to taste

Instructions

  1. Preheat your oven to 325Β°F (163Β°C).
  2. Score the ham with shallow diagonal cuts about 1/4 inch deep in a diamond pattern all over the surface.
  3. Stud the ham with whole cloves by inserting them into the intersections of the scored lines.
  4. Place the ham on a rack in a roasting pan and pour about 1/4 cup pineapple juice into the bottom of the pan.
  5. In a small saucepan, combine honey, brown sugar, pineapple juice, Dijon mustard, cinnamon, and ground cloves over medium heat. Stir occasionally and simmer gently for 5-7 minutes until slightly thickened.
  6. Brush the glaze generously over the ham’s surface, reserving some for later basting.
  7. Roast the ham for about 1 hour, basting every 15-20 minutes with the reserved glaze.
  8. Check the internal temperature with a meat thermometer; when it reaches 140Β°F (60Β°C), the ham is warmed through and ready.
  9. Remove the ham from the oven and tent loosely with foil. Let rest for 10-15 minutes to allow juices to redistribute.
  10. Slice and serve warm, enjoying the shiny, sweet crust.

Keep extra pineapple juice handy to add to the pan if it dries out during cooking. Tent the ham loosely with foil after basting if your oven runs hot to prevent burning the glaze. Use multiple thin coats of glaze for a better crust. Let the ham rest before slicing to keep it juicy.
