Ingredients

  • Cooked beetroot (about 1 cup, roughly 150g / 5.3 oz), peeled and chopped
  • Cooked chickpeas (1 can, 15 oz / 425g), drained and rinsed
  • Fresh lemon juice (2 tablespoons, about 30ml)
  • Tahini (3 tablespoons, 45ml)
  • Garlic cloves (2, minced)
  • Extra virgin olive oil (3 tablespoons, 45ml)
  • Ground cumin (1 teaspoon)
  • Salt (to taste, start with ½ teaspoon)
  • Water (as needed for consistency)
  • Natural food coloring in blue and purple (optional)
  • Assorted fresh vegetables: cucumber slices, carrot sticks, radishes, snap peas
  • Assorted crackers and pita chips (whole grain or gluten-free if preferred)
  • Black olives (pitted)
  • Edible star-shaped veggies or cheese (optional)
  • Fresh herbs like parsley or chives, finely chopped (for garnish)

Instructions

  1. Prepare the Beetroot: Roast at 400°F (200°C) for about 45 minutes or boil for 30 minutes until tender. Let cool, peel, and roughly chop. If using canned, drain and rinse well.
  2. Blend the Hummus Base: In a food processor, combine cooked beetroot, chickpeas, lemon juice, tahini, garlic, cumin, and salt. Pulse to mix.
  3. Add Olive Oil and Adjust Texture: With processor running, slowly drizzle in olive oil. Add water one tablespoon at a time until creamy consistency is reached (about 2-3 minutes).
  4. Create the Galaxy Effect: Divide hummus into three bowls. Leave one plain, add blue food coloring to second, purple to third. Dollop colors side by side on serving plate and swirl gently with a toothpick to create marbled galaxy look.
  5. Prepare Veggies and Crackers: Slice cucumbers, carrots, radishes, and snap peas into bite-sized pieces. Use cookie cutter for star shapes if desired. Arrange veggies, crackers, and olives around hummus on platter.
  6. Garnish and Serve: Sprinkle chopped parsley or chives over hummus and veggies. Serve immediately or refrigerate up to 2 days. Bring to room temperature before serving.
