  • 1012 medium tomatillos, husked and rinsed
  • 1 medium white onion, quartered
  • 23 cloves garlic
  • 2 jalapeño peppers, stemmed
  • 1 tablespoon olive oil
  • 1/2 cup fresh cilantro leaves, packed
  • Juice of 1 lime
  • Salt to taste

Instructions

  1. Preheat your oven to 425°F (220°C). Arrange the tomatillos, onion quarters, garlic cloves (unpeeled), and jalapeño peppers on a baking sheet. Drizzle with olive oil and toss gently to coat evenly.
  2. Roast the vegetables for about 15-20 minutes until they develop a slight char and soften. The tomatillos should turn golden and blistered, and the jalapeños’ skin should blacken slightly.
  3. Once roasted, peel the garlic cloves. Transfer all the veggies to a blender or food processor. Add the fresh cilantro, lime juice, and a pinch of salt. Blend until smooth but still with a bit of texture. Add a splash of cold water if the salsa is too thick. Taste and adjust salt or lime juice as needed.

Notes

Use fresh tomatillos for best texture and flavor. Adjust jalapeño quantity to control heat. Remove seeds and membranes for milder salsa. Pulse blender to avoid overheating and preserve bright green color. Salsa keeps in fridge up to 7 days in airtight container. Can be frozen for up to 3 months.
