  • 2 medium tomatoes, finely diced (or 1 cup canned diced tomatoes, drained)
  • ¼ cup red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • Juice of 1 lime
  • 2 tbsp fresh cilantro, chopped
  • Salt to taste
  • 8 small soft corn or flour tortillas
  • 1 cup shredded cheddar or Mexican blend cheese (optional)
  • 1 cup shredded lettuce or cabbage
  • ½ cup sour cream or Greek yogurt
  • 1 avocado, sliced or mashed

Instructions

  1. Prepare the Salsa (10 minutes): In a medium bowl, combine diced tomatoes, finely chopped red onion, minced jalapeño, lime juice, and chopped cilantro. Add a pinch of salt and stir well. Let sit while cooking the meat.
  2. Season the Meat (5 minutes): In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Add ground meat and cook for 3-4 minutes, breaking it up with a spatula.
  3. Cook the Meat with Seasoning (7-8 minutes): Sprinkle seasoning mix evenly over the meat. Stir well to coat all pieces. Continue cooking until meat is fully browned, about 5 more minutes. Add a splash of water or broth if pan gets dry.
  4. Warm the Tortillas (5 minutes): Warm tortillas over a gas flame for a few seconds per side or heat in a dry skillet for about 30 seconds each side until soft. Wrap in a clean kitchen towel to keep warm.
  5. Assemble the Tacos (5 minutes): Lay out tortillas and spoon seasoned meat onto each. Top with shredded cheese, fresh salsa, lettuce or cabbage, sour cream or yogurt, and avocado slices. Add extra hot sauce or lime wedges if desired.
  6. Serve Immediately: Enjoy tacos fresh and warm. Keep extra toppings on the side for customization.
