  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil (optional)

Instructions

  1. Peel the mango with your hands or a vegetable peeler, then use a fork or potato masher to mash the flesh in a mixing bowl until chunky but slightly pulpy (about 3-4 minutes).
  2. Grate the red onion and jalapeño directly into the bowl with the mango using a fine grater or microplane.
  3. Add 2 tablespoons of fresh lime juice over the mixture and stir gently.
  4. Sprinkle in 1/2 teaspoon kosher salt and 1/4 teaspoon freshly ground black pepper. Add 1 tablespoon olive oil if using. Mix thoroughly but gently for about 1 minute.
  5. Fold in 1/4 cup chopped fresh cilantro (or parsley if preferred).
  6. Taste and adjust seasoning by adding more lime juice or jalapeño if desired.
