Ingredients

Scale
  • 1 medium head of cauliflower, cut into bite-sized florets
  • 3/4 cup all-purpose flour
  • 3/4 cup water (room temperature)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Frank’s RedHot sauce
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon honey or maple syrup
  • 1/2 cup blue cheese crumbles
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon mayonnaise
  • 1 teaspoon lemon juice
  • 1 small garlic clove, minced
  • Salt and pepper to taste

Instructions

  1. Wash and dry the cauliflower thoroughly. Cut into evenly sized florets, about 1.5 inches each.
  2. In a large mixing bowl, whisk together the all-purpose flour, water, garlic powder, smoked paprika, salt, and black pepper until smooth and free of lumps.
  3. Dip each cauliflower floret into the batter, ensuring it’s fully covered, then shake off excess batter. Place coated florets on a baking sheet or plate.
  4. Preheat the air fryer to 400°F (200°C) and let it heat for about 3 minutes.
  5. Arrange the battered florets in a single layer in the air fryer basket without overcrowding. Cook for 15 minutes, shaking the basket halfway through.
  6. While the cauliflower cooks, mix Frank’s RedHot sauce, melted butter, and honey in a bowl. Adjust sweetness or heat to taste.
  7. Once cooked, transfer cauliflower bites to a large bowl and drizzle buffalo sauce over them. Toss gently to coat evenly.
  8. In a small bowl, combine blue cheese crumbles, Greek yogurt, mayonnaise, lemon juice, and minced garlic. Mix until creamy but still chunky. Season with salt and pepper.
  9. Serve the crispy buffalo cauliflower bites immediately with the blue cheese dip on the side.

Notes

Dry cauliflower thoroughly before battering to avoid soggy bites. Do not overcrowd the air fryer basket to ensure even crispiness. For extra saucy bites, brush buffalo sauce on and air fry for an additional 2-3 minutes, watching closely to avoid burning. Let blue cheese dip chill for 10 minutes before serving to meld flavors. For gluten-free, substitute flour with almond or chickpea flour. For dairy-free, use vegan butter and a dairy-free ranch dip instead of blue cheese.
