  • 3 large eggs, room temperature
  • 1/3 cup vegetable oil (80 ml)
  • 1 cup water (240 ml)
  • 1 small box pistachio instant pudding mix (about 3.4 oz / 96 g)
  • 2 cups cold milk (480 ml), whole or 2%
  • 1 cup cold heavy whipping cream (240 ml)
  • 1/4 cup powdered sugar (30 g)
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped unsalted pistachios (30 g), optional garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with butter or non-stick spray.
  2. In a large mixing bowl, combine the yellow cake mix, eggs, vegetable oil, and water. Beat on medium speed for about 2 minutes until smooth and well combined.
  3. Pour the batter into the prepared pan and smooth the top with a spatula. Bake for 28-32 minutes or until a toothpick inserted in the center comes out clean.
  4. Let the cake cool for 10 minutes. Using a wooden skewer or thick toothpick, poke holes all over the cake about 1 inch apart.
  5. In a separate bowl, whisk together the pistachio pudding mix and cold milk for 2 minutes until thickened. Let it sit for 5 minutes to set.
  6. Slowly pour the pudding over the warm cake, allowing it to seep into the holes. Spread gently if needed. Refrigerate for at least 2 hours or overnight.
  7. Chill mixing bowl and beaters for 10 minutes. Whip the heavy cream with powdered sugar and vanilla extract on high speed until stiff peaks form.
  8. Spread the whipped cream evenly over the pudding-soaked cake. Sprinkle chopped pistachios on top if desired.
  9. Serve chilled. Store leftovers covered in the refrigerator for up to 3 days.

Notes

Use chilled equipment for whipping cream to achieve stiff peaks faster. Pour pudding gradually to ensure even absorption. Letting the cake rest overnight enhances flavor. For gluten-free or dairy-free versions, substitute cake mix and dairy ingredients accordingly.
