  • 16 ounces (450g) cream cheese, softened
  • 2/3 cup (135g) granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons (30ml) sour cream or Greek yogurt
  • 3 tablespoons granulated sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease an 8×8 inch (20×20 cm) baking pan with butter or line it with parchment paper, leaving an overhang for easy removal.
  2. In a medium bowl, whisk together flour, sugar, cinnamon, baking powder, and salt. Pour in melted butter and stir with a fork until mixture resembles coarse crumbs.
  3. Press two-thirds of the crust mixture firmly into the bottom of the prepared pan. Bake for 12 minutes until slightly golden.
  4. In a large bowl, beat softened cream cheese with sugar until smooth and creamy, about 2-3 minutes. Scrape down the sides as needed.
  5. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and sour cream or Greek yogurt until fully combined.
  6. Pour the cheesecake filling evenly over the warm crust and smooth the top gently with a spatula.
  7. Crumble the remaining crust mixture over the cheesecake batter.
  8. Mix sugar and cinnamon in a small bowl and sprinkle evenly over the crumb topping.
  9. Bake for 35-40 minutes, or until edges are set and center jiggles slightly when shaken gently.
  10. Cool completely on a wire rack, then chill in the refrigerator for at least 3 hours or overnight.
  11. Slice into bars with a sharp knife, wiping the blade clean between cuts for neat edges.
